Add it right at the end and fry it till the moisture is all but evaporated. One question though, if I was to add yogurt in the pulao, like your family does, when do I add it? Like you, I live in London and get free range chicken, but my Urdu speaking roots mean I am petrified of having 'hamaq' in any meat, so I rather just add the yogurt to quell the smell.
